Yu Choy
(Choy Sum)

Yu Choy, also known as Chinese flowering cabbage or choy Sum, is a leafy green vegetable that originated in China. It is a member of the Brassicaceae family, which also includes broccoli, cabbage, and kale. It has a mild, slightly bitter flavor and a crunchy texture. It is used in many Asian dishes, such as stir-fries, soups, and salads.

It is a good source of vitamins A, C, and K, as well as calcium, iron, and fiber. It also contains antioxidants that can help protect the body against cell damage. Choy sum is a low-calorie food that is low in fat and cholesterol.

Heat 1 tbsp of vegetable oil in a large skillet or wok over medium heat. Add in 1 minced garlic and cook until fragrant. Add in 1 bunch of trimmed and chopped Yu Choy and cook, stirring occasionally, until wilted, about 2 minutes. Season with salt, pepper, 1 tbsp oyster sauce, 1 tbsp soy sauce, and 1 tsp sesame oil. Cook until the Yu Choy is heated through, about 1 minute more. Serve immediately.
